This luxury “multi-vintage” cuvée, based on the 2015 vintage but with a third of reserve wines dating back to 1990, is a barrel-fermented 80% Pinot Noir and 20% Chardonnay from 50 year old vines. Described by Jancis Robinson in a previous vintage as “A sort of Montrachet of Champagne!” this is a distinctive, sumptuous wine with spicy oak, beautifully pure fruit and stunning freshness and finesse. Its richness, complexity and length are a great reflection of the terroir in Aÿ.
As with the other top Henri Giraud cuvées, the creation of this champagne is very hands-on, with grapes harvested by hand, and élevage taking place for 12 months in Argonne oak barrels. Patience is the watchword, with this champagne spending a further 4 years in bottle on fine lees before being released with a dosage of 7.5 g/l.

"An edgy, lively Champagne with bread dough, dried apples and apricots. Toffee with caramel with a lifted sense. Light oxidation with some nuts and saltiness. Full-bodied and very layered with so much going on. Creme brulee, pie crust and zingy acidity. Minty and lively. Strawberries and oranges coming through. This is 80% pinot noir and 20% chardonnay, all fermented in wood, 60% new. Drink now."
"The richness of roasted hazelnut, coconut, spruce and vanilla clothe the entire nose in smooth richness. The palate has that same, rounded, oaky sheen, with pleasantly integrated notes of graphite and flint and behind that verbena and petits fruits rouges. Mellow and rich but underneath the freshness and power are undeniable. A champagne, with great drive, of real individuality and distinction with great drive."
