Our note
The 2023 vintage, shaped by Matthieu Mangenot’s expertise, reflects a shift from the previous year with less use of whole bunch fermentation, focusing instead on purity and clarity of fruit. Across the range, the wines showcase impressive structure, vibrant acidity, and nuanced expressions of their respective terroirs, promising early approachability for some and significant aging potential for others.

"This classic wine boasts moreish aromas of Mirabelle plums touched with honey, 'the beginning of apricot and quince' according to director Louis Gimonnet. The palate has marvellous concentration and depth of flavour, balanced acidity and superb elegance and finesse. This unique 2.35ha monopole lies in an amphitheatre, mostly in Grand Cru Vaudésir but overlapping into Les Preuses. The grapes are hand-harvested, gently crushed, fermented in stainless steel tank and old cask (25%) before an extended maturation."
"The 2023 Chablis La Moutonne Grand Cru has the best potential on the nose, well-defined and conveying more energy than Les Preuses or Vaudesir. The palate is well balanced with a fine bead of acidity, moderate weight, and slightly waxy in texture. Still, (again), it needs to develop more mineralite and tension on the finish."
